Up your game and look like a gourmet cook with this charred purple cabbage that isn’t as hard to make as it looks.Cabbage, like all cruciferous veggies, tastes best when roasted. While this tastes great as it is, a puree of green onion, spiked with lime and tahini, adds the perfect nutty, tart foil that takes this recipe to the next level.I would suggest to wait till you serve to add the sauce because it will make it quite soggy.This is a very simple and easy recipe so please read on.Here is a before and after image for my braised cabbage.I did skimp up on the sugar because I am more of a savoury person that a sweet (Pun intended 🙂 , I am savoury for real too).
Do make sure to not under-season or over-season your cabbage because you need the perfect balance.If you like sweet and sour do add brown sugar , it beautifully caramelises on the cabbage and makes hell lot of a difference.If you are in a bit of rush slice your cabbage thinner and skip the part where you cure it with salt. I find that curing cabbage with salt draws out a lot of moisture and makes the seasonings stick to the cabbage really well.But its an optional step , skip it if you’re running late.Who set the rules ? you do ! your kitchen your rules. Don’t let anyone tell you otherwise.Serve it alongside a fatty protein side dish or just some rice. Didn’t I promise this is a simple recipe ?
