There is nothing I love more than the smell of fresh bread in the morning. I know most of you including me have a really hectic work schedule. This recipe doesn’t call for you to slave away hours in the kitchen. I prepare the dough the night before and let it sit overnight. Morning I just add the batter to my loaf pan and let it bake while I continue on my morning routine. When I made this bread today morning my entire apartment smelled like a bakery in Paris.Its an experience I want you all to have. There is an upside to baking bread at home and that’s the fragrance. You can customise your bread as you like. Use oatmeal flour, add seeds and grains, add dry fruits, make it sweet or savoury. There is no end to what you can do with bread which is why I love bread so much.If you have a loaf of bread, a bottle of milk and butter at home, trust me you won’t go hungry. Thats the first I would like to stock up on , god forbid if there was a natural calamity or hunger strike.

There are lot of varieties of bread that are available these days and you can start off with something as simple and quick as foccassia and then transition to may be a dutch oven baked sour dough bread.As you get better at making bread you will be able to estimate when your bread is ready. If you are unsure that the centre of your bread hasn’t cooked perfectly , let it go an additional 5 minutes in the oven. The worst that will happen is that your bread will dry out a little bit but better dry than uncooked right ? For this recipe your bread is going to be done when its medium to dark golden brown on the top, the texture on the top should be dry. A thermometer inserted into the middle of the bread will read about 190-200C when its fully cooked. Yes do note that the internal temperature of the bread needs to be on the higher side if your bread has eggs, milk or butter.If you do like perfection in life and prefer a pretty bread poke your bread from the side at an angle so that the hole isn’t visible.

Now coming to the inspiration for this recipe.Very recently I saw Gordon Ramsay’s take on Ploughman’s lunch with Beer Soaked Bread.I am adding the link right here just in case you are interested in the original recipe.I didn’t add beer to my recipe and also didn’t let it rise so much because hello ! I got to go to work in the morning I ain’t go whole day to wait for my dough to rise.Most of you know the importance of a few minutes in the morning. Its so crucial. The last thing you need is another errand taking up your time.I know a lot of you skip breakfast in the morning so I am trying to be creative and help you guys make something that isnt very time consuming.

Ingredients

  • 1 cup Bread Flour
  • 1 teaspoon Active Dry Yeast
  • 1 tablespoon Sugar
  • 1 teaspoon Salt
  • 2 cups Water
  • 4 tablespoons Milk
  • 1 teaspoon Seasonings
  • 1/2 cup Extra Virgin Olive Oil

Instructions

  1. Start by activating the yeast , mix cup of warm water (100-110F), sugar , yeast and let it sit for 20minutes you know the drill
  2. Add in flour , milk ,salt and olive oil , mixing it for at least 25 minutes by hand/8 minutes on a standing mixer.This step is crucial to get the gluten to develop
  3. You will have a very sticky fluid kind of mix for this bread, this is a no knead dough recipe.So let it rest for 2-12 hrs.I left mine overnight.
  4. Line a baking pan with parchment, fill it with the batter 3/4 of the height.Sprinkle your seasonings.
  5. Preheat oven to 190C and bake it for 25-30min till you see a dark brown crust on top of the bread. A thermometer inserted in the middle of the bread should read 190-200C when its completely baked
  6. Slice the bread once it cools down a little bit, serve with a dollop of butter alongside fresh juice, coffee , tea
