India is a tropical region and we get plenty of fresh fruits and vegetables. During the months of November – December however we get ample of root vegetables like sweet potatoes, tapioca, cabbage, cauliflowers, radish, carrots and so on. What makes it special this season is that these vegetables generate heat within our bodies thus helping us to cope with the cold weather outside. In most places around the world you will find vegetables all the time but its most recommended to eat seasonal vegetables only. Eating out of season vegetables not only compromises on the natural quality its not well taken by our bodies also. Nature has provided us each vegetable during a certain time based on the needs of the time. Having said that, I found that this is the perfect time to try out a few recipes from the Nordic Cuisine. What is Nordic Cuisine ?

New Nordic Cuisine also known as Scandinavian food is a dynamic form of food whose birthplace resides in Copenhagen, Stockholm and Helsinki.So its basically like turning Europe upside down.Nordic food is prepared on the basis of three key elements: purity ,simplicity and freshness.It encourages usage of only seasonal foods ,preparation of traditional dishes using ingredients benefitting from the local region’s climate, water and soil.Nordic food is rich in omega3, protein and anti-oxidants.The style of cooking prevents over-heating and over-cooking.
To understand the health benefits of a Nordic diet, look at the low levels of obesity in Sweden, there gotta be something about it.Foods like fatty fish, cabbage, root vegetables and rye bread are amongst the healthiest in the world and are an essential part of nordic cooking.Thinking whether you will like the taste? the most popular spices and herbs include chives, thyme, cardamom, juniper berries, parsley and fennel.Nordic diet is effective in short term weight loss even when you start to limit your calories. Can you believe it ? you can lose weight if you incorporate nordic food in your diet!

In todays post I will be doing a traditional nordic style root vegetables crisp.Its a healthy alternative to fried potato chips without compromising on the taste.The vegetables that I have chosen include beetroot, sweet potato, tapioca and radish. You can of course use tapioca, turnip, yellow beets, horseshoe radish.Include your pick of favorite vegetables and watch how they turn into something so awesome.What I love most about this recipe is that its super easy to make, you can make your kids eat it and also freely binge on while being a couch potato over the weekend.

- 4 cups Root Vegetables ,1 of each kind is enough
- 1 tablespoon Rapeseed Oil or any cooking oil which doesn't smoke very fast
- 1 teaspoon Black Pepper
- 1 teaspoon Salt-to taste
- 1 teaspoon Cajun Spice
- 1 cup Vinegar
- 1 cup Water
- Start by thinly and evenly slicing your root vegetables after cleaning them thoroughly.Even slicing leads to even cooking and also if you slice thick it wont crisp up and if you slice too thin it would burn so make sure you get the right balance
- Soak them in vinegar and water mix, this marination step will help in enhancing the flavors besides cleaning your root vegetables thoroughly.
- Coat them with olive oil and seasoning along with salt.
- Spread them on a baking sheet with no overlap and let them bake at 375 for 10min
